Veg Fried Rice Recipe


VegFried rice recipe – aromatic, flavorful and delicious vegan fried rice recipe made with mix vegetables.

If you want non - veg Fried rice means you add egg,chicken,mutton,fish also.

I have kept this veg fried rice plain and simple so that the flavors of the vegetables are enhanced.

Veg Fried Rice

Preparation time-30 min

Cooking time- 15 min

Serves -2 to 3 persons

For Cooking Rice 

long grained rice or basmati rice -1 cup

Salt- 1/2 tsp

oil - 1 tsp

Ingredients 

Chopped vegetables 

Carrot- 1cup

Beans-1 cup

Cabbage-1 cup

Capsicum- 1/2 cup

soy sauce- 2tsp or add as required

Vinegar -1 tsp

black pepper powder - 1 1/2 tsp add as required

Oil- 2 to 2.5 tsp

salt -to taste


Method

Rinse rice very well till the water runs clear of starch. Soak rice in water for 30 mins. Drain and keep aside.

In a pot, bring to a gentle boil 4.5 to 5 cups of water with salt and 2 to 3 drops of oil.

Add the soaked and drained rice to the hot water.

On a low to medium flame cook the rice without the lid.

When the rice becomes al dente or just cooked, remove the pot from fire and drain the rice.

You can also gently rinse the rice in water so that they stop cooking and don't stick to each other. Cover the rice and keep aside till the rice cools completely.



Making Fried rice

Heat oil in a wok or a pan. First add the star anise and fry for some seconds or till the oil becomes fragrant

Then add all the finely chopped vegtables. Increase the flame to a medium or high and stir fry the vegetables.


You have to continuously toss and stir while frying so that the vegtables are uniformly cooked and do not get burnt.

The vegtables have to be stir-fried, till they are almost cooked and yet retain their crunchiness and crispiness.

Add the soy sauce,vinegar, salt and pepper. Stir quickly and add the rice. Stir fry for a few minutes till the sauce has coated the rice well. 


Keep a check when adding salt, as soy sauce already has salt in it.mix well



Serve the fried rice hot plain with gravy or tomato sauce with Gobi 65.
